It's no secret I'm a big fan of pumpkin spice peanut butter. Correction, I'm a big of peanut butter in general! When I don't have peanut butter with something for breakfast, I feel like my whole day is out of whack. Any one else?! I do like switching it up with almond butter once in awhile, and having a Vitamix makes it super easy to not pay over ten bucks for a jar! (I buy my almonds in the bulk section of the grocery store when they're on sale!) So especially this time of year, adding pumpkin pie spice extract and extra pumpkin pie spice to my almond butter was a NO brainer, and I'm telling you I can't stop putting it on everything! It's perfect on top of pumpkin pancakes, pumpkin waffles, with a banana, or just by the spoonful after a long day. Recipe below! You bettah, make this buttah :)
Pumpkin Spice Almond Butter
2 cups almonds, chopped into pieces
2 Tbsp. coconut oil
4-5 drops of pumpkin pie spice extract
1-2 heaping Tbsp. pumpkin pie spice
Place almonds, coconut oil, and pumpkin pie extract in Vitamix. Blend on high. Reduce speed as almond butter begins forming. On low, add pumpkin pie spice. Refrigerate and enjoy!
